I made this soup using simple ingredients and it tasted delicious. Quick and healthy, that’s what I like the most on a busy day.
- 2 medium white onion, diced
- 4 cloves garlic, minced
- 4 small sweet potato, cubed
- 1 tbsp. coconut oil
- 1 tbsp. garlic powder
- 1 tbsp. ginger powder
- 60g coconut cream ( or coconut milk – I only had coconut cream)
- scotch bonnet (optional)
I started the soup by sweating the onions and garlic in a large pot in 1 tbsp coconut oil stirring frequently for couple of minutes. Next, I added sweet potato, spices (salt, pepper, garlic powder, ginger powder, scotch bonnet) coconut cream and water just above all ingredients. I simmered it for 25 minutes under the cover. At the end I blended everything until smooth.
You can add on top for example: seeds or almond flakes.
